Step 1: Prepare Zucchini Mixture
Preheat oven to 325 F. Grease and flour the loaf pan. Grate zucchini using a grater. In a large bowl, beat eggs until light and frothy. Add vegetable oil, sugar and beat well. Then add zucchini, vanilla extract and stir it.
Step 2: Prepare Batter
In order to make the batter, whisk together flour, cinnamon, baking soda, baking powder, salt and chopped walnuts in a bowl. Add flour mixture to the zucchini mixture and beat until well combined.
Step 3: Bake Zucchini Bread
Pour batter into prepared loaf pan. Place loaf pan in the oven and bake for 60 minutes or until tester inserted in the center comes out clean.
Step 4: Glaze and Garnish Zucchini Bread
Remove Zucchini Bread from the oven and let it cool completely. Spread icing glaze over top of the cooled Zucchini Bread. Garnish with chopped walnuts, if desired. Your Zucchini Bread is ready!
