Step 1: Prepare Jambalaya Base

Place the large pot on medium heat, add the oil and allow it to warm through. When warm, add the onions, green peppers, garlic, chicken and stir in well. Cook for roughly 10 minutes, stirring occasionally.

Step 2: Season With Spices

When the chicken is cooked, add the creole seasoning, paprika, black pepper, tabasco sauce and stir it.

Step 3: Cook Jambalaya

Add the rice, chicken stock stir and reduce the heat to a simmer. Allow to simmer gently for roughly 15 minutes or until half the liquid has been absorbed. Once absorbed, add the prawns, chorizo, chopped tomatoes, spring onions, 2 pinches of salt and mix well. Then cover and simmer for roughly 30 minutes.

Step 4: Serve Jambalaya

After simmering for 30 minutes, remove Jambalaya from heat. Sprinkle Parsley over Jambalaya. Serve and enjoy!

  • 3 Chicken Breasts, chopped
  • 250g Chorizo (spicy spanish sausage)
  • 250g Peeled Prawns
  • 120ml Vegetable Oil
  • 1 Green Pepper, chopped
  • 1 Onion, chopped
  • 5 Cloves of Garlic, chopped
  • 620g Long Grain Rice
  • 1 ¼ ltr Chicken Stock
  • 3 Spring Onions, sliced
  • 400g Canned Chopped Tomatoes
  • 2 tbsp Tabasco
  • ½ tsp Paprika
  • 1 tsp Creole Seasoning
  • 1 tsp Ground Black Pepper
  • Salt To Season
  • Fresh Parsley, chopped
