Step 1: Make Ice Cream Base
Pour creamy milk and vanilla pod in a saucepan over medium heat and bring milk to a boil and simmer very gently for a couple of minutes.
Whisk egg yolks and caster sugar together in a large bowl.
Pour half of the warmed milk in the egg mixture and whisk well.
Pour egg mixture to a saucepan at low flame and cook for about 5 minutes, stirring constantly, but don't let it boil.
Take out vanilla pod from the mixture and switch off the stove.
Transfer mixture into a large bowl.
Then add clotted cream and mix well.
Cover bowl with a plastic wrap and refrigerate overnight.
Step 2: Make Crumble Topping
Preheat the oven to 200F.
In a large bowl, add flour, butter and rub butter into flour with your fingertips until the mixture resembles coarse crumbs.
Add brown sugar, ground almonds, oat flakes and mix together.
Transfer crumble mixture on the baking tray and spread it with spatula.
Place baking tray in the oven and bake for 12 minutes until crumble topping is golden in color. Remove baking tray from the oven and leave it to cool.
Transfer crumble topping into a large bowl.
Step 3: Make Ice Cream
Add chopped apples in a saucepan with sugar.
Stir and cover it with a lid and cook in low flame for 6-7 minutes, until apples are soft but not disintegrated.
Remove cooked apples from the heat and transfer into a large bowl and allow it to cool.
Remove ice cream base from the fridge and mix it well. Pour ice cream base into an ice cream maker and crunch roughly for 20 minutes until it has reached a soft consistency.
Add crumble topping to an ice cream maker and churn again for 5 minutes. Add apple topping in an ice cream maker and churn again until it has the consistency of an ice cream. Pour crunched ice cream into an ice cream container. Place ice cream container in the fridge for 4-5 hours or overnight.
Step 4: Garnish and Serve Ice Cream
After freezing the ice cream, scoop some ice cream into a serving bowl. Garnish ice cream with caramel syrup, colorful sprinkles and cherries.
Serve your ice cream with apple crumble. Your ice cream is ready. Enjoy it!
